DEWAR’S ‘Double Double’ 21 Year Old has pioneered the ‘double ageing’ process, with all the blends in the range undergoing a secondary resting in oak casks to marry the flavours and bring extra smoothness to the blend. With the limited edition new ‘Double Double’ range, this process has become an art form, with a ‘quadruple aging’ or ‘double double’ aging process created by Dewar’s master blender Stephanie Macleod. Innovation comes in many forms, and in 2019 our Master Blender, Stephanie Macleod, released a new range of Blended Scotch Whiskies with a Four Stage Ageing Process for Ultimate Smoothness. This may sound like an indulgence but the series has been picking up gold medal awards the world over since being released.

Firstly, the malt whiskies achieve their required age, and are mixed together and returned to an oak cask. The same happens to the grain whiskies. Then the two whisky types are blended together, and returned to an oak cask for a secondary double aging period. Finally, the blend is finished in an ex-Sherry cask. This 21-year-old release has been finished in Oloroso Sherry casks, giving the whisky “subtle notes of cinnamon and ripe vine fruits with a silky smooth finish”.

TASTING NOTES:

  • Aroma: Highly pleasant and appealing nose. Malt and grain are intertwined. Honey, peach cobbler, grilled pineapple, some meatier scents of roasted pork, and the faintly rich citric note of Meyer lemon. Some tannic wood hovers around the periphery, but never overwhelms the layers of aromas.
  • Palate: Sweet dried fruits, leather, caramel, cinnamon, cherry, malt cookies.
  • Finish: Medium, smoothness that have to be credited. Get dryer and chewy with tingling spiciness to tease. Scents of dark rum, oak driven.
