The Elephant in the Room wines are proudly large in scale and expansive in flavour. Created to deliver full bodied and mouth-filling wines, Elephant in the Room gives consumers what they want- quality, flavour and something to talk about. Each wine is sourced from slow-ripening cool climate vineyards and partially matured in French Oak before final blending and bottling by Corey Ryan.
Sourced from a selection of mature, dry-grown vineyards in Langhorne Creek managed by Jim Zerella. The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. A small component of the blend is cool distilled whilst another undergoes ultra-membrane filtration. With very gentle handling, these components are masterfully blending back into the original parcel of wine to arrive at a well-integrated, lighter finished ABV. Followed by six months maturation in a combination of second-use oak and stainless steel before bottling.
Deep purple in colour, this wine offers aromatic notes of red berries and blackcurrants with violet overtones and a hint of cedarwood spice. The palate is dense and plush, featuring flavours of blood plum, chocolate, blueberry, and spice, with a supple, silky mouthfeel framed by subtle oak toast and fine tannins.
